Yields 10 guests

To make the Citrus Syrup (yields 750ml)

300ml newly squeezed clementine juice
200ml recently pressed lemon juice
500g caster sugar

Ingredients for the Drink (produces 850ml, enough for 10)

400ml decent vodka
100ml classic gin
150ml peach schnapps
200ml clementine cordial (see above)
Fresh cranberries, for garnish
Mandarin essential oil, to finish

Directions

Making the Syrup: Put the listed components into a pan, heat until it reaches a simmer, agitating so the sugar melts. Then, remove from the stove and leave to reach room temperature completely. Transfer to a sealable bottle, seal and store in the fridge, where it will keep for about four weeks.

To make Batch Mix: Combine every liquid ingredients into a sizeable container, allow it to infuse for one hour, then strain preferably using cheesecloth, to ensure it's fully clarified.

For serving: Add 85ml from the batch mix into your mixing glass packed with ice, and agitate lightly for a minute until cold. Filter to a chilled martini glass or similar, top with some cranberries adding the final touch with a quick spritz of mandarin oil over the drink.
